本 硏究는 우리나라에서 現在 飼育되고 있는 韓國在來닭의 産肉能力과 屠體特性을 調査하여 肉鷄의 能力과 비교함으로써 在來닭의 飼養管理에 대한 기초자료를 제시하고자 1992年 3月부터 同年 6月까지 14週間을 在來닭과 肉鷄 2鷄種을 産卵飼料를 이용하여 암수 各各 50首씩 總 200首를 조사 기록한 成績으로 비교분석하였던바 그 結果를 요약하면 다음과 같다.
1. 平均 體重은 14週齡에 在來닭이 868.7g, 肉鷄는 3,526.6g으로 入雛時 體重에 비하여 在來닭은 26.6倍, 肉鷄는 72.9倍의 速度로 成長하였다.
2. 在來닭의 屠體率은 수컷이 74.1~78.5%, 암컷은 73.9~77.5%이었으며, 肉鷄의 屠體率은 수컷이 72.2~76.9%, 암컷은 71.7~76.9%를 나타내 在來닭의 屠體率이 肉鷄에 비해 2% 內外 더 높았다.
3. 可食部位 重量을 비교한 결과를 보면 9~14週齡의 屠體重 대비 翼部의 중량비율은 在來닭의 수컷이 11.5~12.4%, 암컷은 11.5~13.1%인 반면에 肉鷄의 수컷은 11.9~10.7%, 암컷은 10.7~12.2%로 在來닭의 중량비율이 높고 또한 週齡이 증가하면서 在來닭의 翼部는 계속 성장하였는데 肉鷄는 屠體重 對比 감소하는 추세를 보였다.
4. 背部와 胸部는 肉鷄가 성장할수록 屠體重 對比 重量比率의 증가폭이 在來닭에 비하여 컸는데 背部에서 在來닭의 수컷은 15.4~17.0%, 암컷은 15.4~16.8%인데 肉鷄는 수컷이 17.2~19.0, 암컷은 17.2~19.1%이었다. 또한 胸部에서는 在來닭 수컷의 屠體重 對比 重量比率은 19.6~22.0%, 암컷은 20.2~22.7%, 肉鷄의 수컷은 23.5~24.5%, 암컷은 25.1~27.0%를 나타냈다.
5. 大腿部와 북채를 합한 重量의 屠體重 對比 비율은 在來닭의 수컷이 26.8~28.0%, 암컷은 25.5~27.1%, 肉鷄의 수컷은 27.7~27.8%, 암컷은 26.9%를 거의 유지하고 있어 在來닭과 肉鷄의 重量比率에 차이가 거의 보이지 않았다.
6. 不可食部位 重量을 비교한 결과에서 9~14週齡의 羽毛重은 在來닭이 生體重 對比 5.3~6.8%인 반면에 肉鷄는 3.8~4.4%로 나타나 在來닭이 肉鷄에 비하여 改良速度가 늦은 경향을 알 수 있었다.
7. 腹腔脂肪 重量은 在來닭의 수컷이 2.42~3.88g, 암컷은 1.84~3.08g으로 암수 모두 屠體重 對比 0.5%를 차지하고 있었다. 그러나 肉鷄의 수컷은 39.4~56.3g, 암컷은 33.3~67.8g으로 2.5~3.0%의 腹腔脂肪을 함유하고 있었다.
This study investigated the characteristics of Korean Native Fowl(KNF) to standarize the feeding regime and compared with those of broiler. The characteristics of KNF studied were meat productivities and carcass traits. The data were collected for 14 weeks from March to June, 1992, by recording from 200 birds(50 birds per each sex and 2 breed) were as follows :
1. Average body weight at 14 weeks of age of Korean Native Fowl(KNF) and broiler were 868.7g and 3,526.6g, respectively and were 26.6 times and 72.9 times of day old chicks weight averages, respectively.
2. The carcass yields during 9~14wks were 74.1~78.5% for KNF male, 73.9~77.5% for KNF female, 72.2~76.9% for broiler male and 71.7~76.4% for female. It was shown that carcass yields of KNF was 2% higher than that of broiler.
3. In edible portion, the yields of wings weight to carcass weight were 11.5~12.4% for KNF male, 11.5~13.1% for KNF female, 10.7~11.9% for broiler male and 10.7~12.2% for broiler female, it was shown that wings weight of KNF was higher than that of broiler and wings weight of KNF during 9~14wks.
4. The portions of back and breast weight were higher than those of KNF during 9~14 wks. The back portions in carcass weight were 15.4~17.0% for KNF male 15.4~16.8% for KNF female, 17.2~19.0% for broiler male, and 17.2~19.1% for broiler female. The breast portions in carcass weight were 19.6~22.0% for KNF male, 20.2~22.7% for KNF female 23.5~24.5% for broiler male, and 25.1~27.0% for broiler female.
5. The portion of thigh and drumsticks weight in carcass weight of KNF was similar to that of broiler. They were 26.8~28.0% for KNF male, 25.5~27.1% for KNF female, 27.7% for broiler male, and 26.9% for broiler female, respectively.
6. For the weight of inedible portion during 9~14wks, feather weight of KNF was 5.3~6.8% of live weight and 3.8~4.4% in those of broiler. This result indicated that KNF has more rooms for improvement than broiler.
7. Abdominal fat weight was 2.42~3.88g for KNF male and 1.84~3.08g for KNF female, which was 0.5% of carcass weight. But broiler has more abdominal fat than KNF as 39.4~56.3g for male, 33.3~67.8g for female which was 2.5~3.0% of carcass weight.
