Immature fruit of ‘Fuji’ apple contains high content of phytochemicals such as polyphenol than mature fruit. This experiment was conducted to find out the proper harvest time by treating ethephon to promote fruit ripening. Seven-years-old ‘Fuji’/M.26 trees were sprayed with 100 ppm of ethephon. Five fruits were collected from the control and ethephon treated trees from 145 to 185 days after full bloom (DAFB) at 10 days interval. As a result of the maturation determination through starch iodine test, ethephon treated fruits were promoted ripening. Weight of fruit collected at conventional harvest period (175 DAFB) was heavy.
