The purpose of this study was to compare the physicochemical properties of low-moisture meat analog (LMMA) and high-moisture meat analog (HMMA) with different moisture content. Low-moisture extrusion condition was moisture content (25, 30, 35%) at barrel temperature (150°C) and screw speed (250 rpm). High-moisture extrusion condition was moisture content (55, 60, 65, 70%) at barrel temperature (160°C) and screw speed (150 rpm).
