Emulsion system provides sufficient interfaces for the oil hydrolysis reaction of lipase and the activity of the reaction has mobility which depends on the distribution of droplet sizes. A distribution of droplet sizes of an emulsion is dependent on not only the composition of surfactants and substrates existing in the emulsion, but the mixing condition of the emulsion [1]. Thus, we focused on the distribution of droplet sizes to compare the activities of Candida rugosa lipase in the emulsions which have similar distributions of droplet sizes, but different compositions and methods of preparation.
