    Every year a large amount of by-products produced by fish processing industries are dumped or used for less productive purposes. This study prescribe a technique for production of good quality edible oil from yellowtail (Seriola quinqueradiata) viscera to valuate this wastes and also serve as a source for omega3 polyunsaturated fatty acids. Several method of extraction and purification of fish oil have been suggested. Conventional method involves high temperature processing that may lead to decomposition or denaturation of the thermally labile compounds or use of toxic solvents that have unfavorable health effect. New methods that use supercritical fluid are replacing conventional method of lipid extraction.
