Effects of liming conditions (concentrations of calcium hydroxide and liming periods) on the yield and quality characteristics of gelatin from chicken feet were examined, and optimum levels of these variables were determined using response surface methodology. The effects of hydrochloric acid and citric acid concentrations used in neutralizing process for chicken feet after liming, on the properties of gelatin were also investigated. The yield of gelatin increased remarkably, but the hardness of gelatin gel decreased gradually with the increases in calcium hydroxide concentration and liming period. The effects on viscosity, turbidity, color, and the textural properties of gelatin sols and gels varied with the liming conditions. The optimum calcium hydroxide concentration and liming period for gelatin production of chicken feet were determined as 3.6% and 8 days, respectively. Adequate concentrations of hydrochloric acid and citric acid for neutralization of chicken feet were 0.01 and 0.05 N, respectively.
