There has been a substantial body of data, supporting that dietary factors have a profound impact on prevention as well as etiology of human cancer. In recent yeas, there have been considerable efforts to search for naturally occurring substances, particularly those present in our daily diet, that can inhibit, reverse, or retard the multistage carcinogenesis. A wide array of phenolic substances derived from edible plants have been reported to possess anticarcinogenic and antimutagenic activities, and in many cases, the chemopreventive activities of dietary phytochemicals are associated with their antiinflammatory and/or antioxidative properties(recently reviewed; Y.-J.Surh, Mutat. Res, 428: 305-327, 1999). Our previous studies have revealed that [6]-gingerol and [6]-paradol, pungent ingredients present in ginger (Zingiber officinale Roscoe, Zingiberaceae) and related plats, inhibit 12-O-teradecanoylphorbol -13-acetate (TPA)-induced ear edema, tumor necrosis factor-α production, ornithine-decarboxylase activity, and Skin tumor promotion in female ICR mice.
