Cardiovascular disease is the leading cause of morbidity and mortality in Korea and worldwide. Available evidence indicates that persons who consume more fruits and vegetables often have lower prevalence of important risk factors for cardiovascular disease. However, the biologic mechanisms whereby fruits and vegetables may exert their effects are not entirely clear and are likely to be multiple. Many nutrients and phytochemicals in fruits and vegetables, including fiber, potassium, and folate, could be independently or jointly responsible for the apparent reduction in cardiovascular disease risk. In this research, we examined the effect of potassium supplementation on blood lipids. Female Sprague-Dawley rats (6 wk old) were obtained from Bio Experimental Animals, Seoul, acclimated for 3 d in a room with controlled temperature, lighting (alternating 12-h periods of light and dark). They were then divided into groups and fed experimental diets ad libitum for 4 wks. The composition of diets is as follows AIN-93. Statistical analyses were performed by using SAS (Statistical Analysis Systems, Cary, NC). Results are presented as means ± SDs, and p<0.05 was the level of significance. Feeding of the experimental diets for four weeks did not affect serum lipid values. In total cholesterol, triglyceride, HDL-cholesterol, and LDL-cholesterol concentration, no differences were found between rats fed diets with or without potassium. However, triglyceride content in liver was lower for the rats fed potassium diet than for those fed control diet. The potassium nutrients exerting triglyceride content reducing effects in liver remain to be elucidated.
