To reduce postharvest loss from harvesting to table on sweet pepper grown in Korea, this study carried out all step after harvest to maintain fruit quality and extend to shelf-life through the application of optimum harvesting time and several treatments. The optimum harvesting time was ripening index ≥ 70% of yellow and red sweet pepper and then transport packing house as soon as possible. If sweet pepper delay transport to packing house and APC (agricultural products processing center), it keeps in shade place within a half day. In order to reduce weight loss, fruits were treated pre-cooling at 8-10°C for 4-6 hours using low temperature warehouse or forced air cooling system.
