The objective of present study was to evaluate the potential of oriental melon (Cucumis melo L.) seeds for management of hyperglycemia-linked to type 2 diabetes. Oriental melon seeds were roasted under different temperatures. The inhibitory activities of roasted oriental melon seeds against α-glucosidase and α-amylase were examined and compared with those of unroasted. The α-glucosidase and α-amylase inhibitory effects of the hexane extracts from roasted melon seeds were increased.
