This study measures the amount of empowerment given to hotel cooks, and how it affects their level of job satisfaction and organizational commitment, in order to provide basic information and suggestions to improve work efficiency and to facilitate efficiency in human resources management. To achieve this, 273 cooks working in open kitchens of hotels in the Busan, Gyeong-nam area were subjected to surveys which ugh SPSS 20.0, a statistical analysis program. The results were analyzed for processed frequency and exploratory factors, and were put through regression analysis for hypothesis testing. The results showed that empowerment showed an analytical result of p<0.001 in effect, capability, self-decisions and meaningfulness, while job satisfaction results showed p<0.001, and job satisfaction showed a positive correlation to organizational commitment. With the results in mind, the empowerment of hotel cooks working in open kitchens had a cause and effect correlation on their job satisfaction and organizational commitment. Therefore, by giving discretional authority to the cooks, hotel managers will be able to see workers to handle tasks by themselves and see them draw up revolutionary solutions to resolve issues or needs by empathizing with the customers.
