Obesity rates have increased over the decades and becomes a major problem in public health. Obesity elevates systemic pro-inflammatory cytokines and classifies as a chronic low-grade inflammatory status. Perilla oil (PO) is a great vegetable source of ω-3 fatty acids, which may give beneficial effects, such as an antioxidant and/or an immune modulator. In this study, we hypothesized that PO consumption would significantly attenuate low-grade inflammation and cardiovascular risk factors than corn oil (CO) consumption in the presence or absence of lipopolysaccharide challenged by intraperitoneal injection into ob/ob mice.
