This study is to identify the odor active volatiles (OAVs) in fennel essential oil (FEO) and investigate changes in metabolic parameters and responses related to central nervous system (i.e. physiological effects), such as total weight gain, fat weights, and hormones. OAVs in FEO were detected using gas chromatography/mass spectrometric detection (GC/MSD) and GC-olfactometry, and a total of 7 volatiles were identified, including 1 aldehyde, 5 hydrocarbons, and 1 ketone.
