Listeria monocytogenes is a food poisoning pathogen that causes listeriosis. Since it is a psychrophilic pathogen, it can grow under cold environment. The aim of this study was to develop a predictive model to describe the growth of L. monocytogenes in enoki mushroom, a recent causative food of L. monocytogenes outbreak. Growth of L. monocytogenes was observed at selected temperatures (5, 15, 25, 30 and 35℃) of which L. monocytogenes could be exposed during the distribution and storage process.
