Resistant starch is starch that is not digested in the human small intestine. It is studied as an anti-obesity prebiotic material according to the use of microbiota. In this study, we investigate the resistant starch, amylose content and in vitro hydrolysis index (HI), estimated glycemic index (eGI) of boiled beans. The types of beans are as follows: Mung bean, White kidney bean, Red kidney bean, Chick peas, Brown Lentils and soybean as control.
