Through factor analysis, emotional labor for 3 factors of emotional control, emotional lack of harmony and emotional deviation. Job stress was 2 factors of role excess and role discord, job satisfaction was 2 factors of private aptitude satisfaction and personnel fairness satisfaction, turnover intention deduced each by single factor of turnover intention. First, private aptitude satisfaction of job satisfaction appeared by variable that factor exerts significance effect while is emotional control of emotional labor and job stress's role excess in F&B restaurant employees, and hotel F&B department employees was emotional control of emotional labor and role discord of job stress exert significance effect. Also, personnel fairness satisfaction of job satisfaction of F&B restaurant employees by variable that emotional deviation factor of only emotional labor exerts significance effect appears, and hotel F&B department employees was variance that emotional deviation of emotional labor and role discord of job stress exert significance effect factors. Second, appeared in role discord factor of job stress exert significance effect in F&B restaurant employees. And hotel F&B department employees by variable that exert effect that factor is significance for turnover intention while is job stress's role excess.
