The concentration of adenosine triphosphate (ATP) in the cell and the culture medium of Listeria monocytogenes ATCC 19114 treated with allyl isothiocyanate (AIT) and acetic acid were estimated to observe the bactericidal effect. In addition, morphological change of microbial cells due to antimicrobial activity was examined using the transmission electron microscope (TEM). Our results showed that when compared to the control group (100%), intracellular ATP concentration of the cell treated with AIT, acetic acid and mixture (AIT + acetic acid) was 2.98%, 4.23% and 3.71% with no significant difference, respectively. These results indicated that ATP effused from the tested microorganisms. The cell wall of L. monocytogenes treated with AIT remained unchanged but the intracellular shape altered, while the cell wall of those treated with acetic acid were either altered or destroyed. The change in intracellular shape and disruptions of the cell wall are assumed to be due to the bactericidal activity resulted from the AIT and acetic acid treatments.
