The aim of this study was to determine the headspace composition of P. frutescens var. acuta Kudo and to compare the performance of 6 commercially available solid-phase micro extractron (SPME) fibers for detecting volatile flavors from this aromatic plant. A total of 124 volatile compounds, which included hydrocarbons (7.22-28.11%), aldehydes (19.07-50.62%), alcohols (2-6.57%), ketones (1.34-12.61%), esters (3.83-10.5%), oxides and epoxides (0.74-1.26%), acids (0.2-4.32%), phthalides (1.11-11.21%), and trace amounts of miscellaneous compounds (2.06-10.62%), were found in the headspace of P. frutescens var. acuta Kudo. Aldehydes, especially perilla aldehyde (17.61-47.82%), were prominent. The relative concentration capacities of the fibers on the volatile components were different. Polydimethylsiloxane-divinylbenzene (PDMS-DVB) was more effective for headspace analysis of P. frutescens var. acuta Kudo than PDMS, Carboxen-PDMS, Carbowax-DVB, DVB/Carboxen/PDMS and polyacrylate.
