    In an effort to breed carrots with low levels of terpenoids, the effect of organic fertilizer on carrot terpenoids was investigated. Volatile terpenoids were detected at low levels in carrots cultivated without organic fertilizer compared with carrots cultivated with organic fertilizer. Among three cultivars used in the present study, Sigyo 601 contained the lowest level of total terpenoids, below 10 ppm. When the organic fertilizer levels were 0, 5, and 10 kg/3.3 m², the levels of total terpenoids were 11.50, 15.75, and 15.77 ppm in Sigyo 501; 6.59, 8.15, 8.36 ppm in Sigyo 601; and 14.83, 23.77, 21.07 ppm in Chudong 100, respectively. Consequently, volatile terpenoids were detected at lower levels in carrots cultivated without organic fertilizer compared with those cultivated with organic fertilizer, while no significant difference was present in carrots cultivated with the organic fertilizer levels at 5 kg and 10 kg/3.3 m². It is concluded that the use of organic fertilizer needs to be reduced to decrease the content of volatile terpenoids in carrots. The sugar content in Sigyo 501 was higher compared with Sigyo 601 and Chudong 100 cultivars with no significant difference according to the organic fertilizer level.
