    Red pepper fruits after harvest were artificially contaminated with organophosphorus pesticides, chlorpyrifos and fenitrothion, at 4 and 10 ppm levels, respectively. After washing and drying red peppers, pesticide residues in the pepper peels were analyzed. Removal effects of residues were tested using various washing methods and lengths of washing time. Shaking the peppers for 5 min in water had the highest pesticide reduction of approximately 30-40%. In addition, either sun- or hot air-drying further eliminated approximately 20-30% of the residues. Thus, combining shaking in water for 5 min with a drying process, the pesticide residues may be reduced by 50-70%. This finding indicates that substantial amount of pesticides in pepper peels can be removed, and such a reduction should be reflected on setting MRLs as well as assessing risk potentials.
