This study was investigated to compare the fatty acid contents of Cephalopods (Paroctoopus dofleini, Todardes pacificus, and Loligo edulis) by processing conditions. Among these three processing conditions (dried, baked, and blanched), those of dried contained the highest total fatty acid contents. Total fatty acid contents of dried P. dofleini and T. pacificus were 1,431.6 and 3,437.0 mg/100 g, respectively.
