Recently, while the demand for healthy functional food has been steadily increasing, demand for legumes, which are abundant sources of protein and rich in isoflavones is also increasing. Sword beans, chickpeas, broad beans, and peas are known to be effective in relieving inflammation, lowering cholesterol, and diuresis. In this study, the optimal extraction conditions and antioxidant activity of the extracts were tested to evaluate the value of these legumes as food materials.
