Resveratrol (RES), a naturally occurring phytoalexin, has been known for health beneficial functions, such as cardioprotective, antihypertensive, and antiaging properties. The root of Polygonum cuspidatum Sieb. et Zucc. (P. cuspidatum) is extensively used as a good source of trans-RES, the most bioavailable form of RES. Our previous study showed an improved conversion rate of piceid (PD) present in grape peel into RES by pre-heating at 95°C for 10 min, followed enzymatic hydrolysis at 50°C for 60 min.
