This study was designed to elucidate the optimal cultural conditions for high-glucosinolate broccoli (Brassica oleracea var. italica) production in the highlands of Korea. The broccoli ‘Pilgrim’ seedlings were separately transplanted at 2 different planting times and fertilized with 4 different concentrations of sulfate. Sulfur fertilization up to 15 ㎏/10 a did not cause physiological disorders in plant shoots or heads. Shoot growth and flower head yield were mainly affected by planting time. Seedling plantation on July 10 resulted in an increased head yield and shorter harvest duration, presumably due to the lower average air temperature during the reproductive growth stage. The glucosinolate content in heads also varied mainly with planting time rather than with sulfur fertilizations. Aliphatic glucosinolates, including glucoraphanin, the precursor of the chemoprotective compound sulforaphane, were highly dependent on sulfur fertilization, while indolyl glucosinolates were more dependent on planting time. The content of total glucosinolate was higher in the earlier harvest, and a significant sulfur-dependent content increase was observed only in the later harvest. These results indicate that climatic conditions influenced by either planting time or sulfur fertilization levels can affect the glucosinolate content in broccoli heads.
