In this study, we hypothesized that partial replacement of lard with perilla oil (PO) would attenuate inflammatory responses and cardiovascular disease risk than corn oil (CO) consumption in lipopolysaccharide(LPS) injected obese mice. Ob/ob mice were fed a normal diet (ND) or ND based on ω-3 (ND+PO) or ND based on ω -6 (ND+CO) for 12 weeks and then treated with either PBS (Control) or LPS (1mg/kg) for 24 h (n=8 per group).
