The aims of this study were to utilize the by-products of farmed salmon in Korea and to develop a new product with the salmon fillets. Also, we compared salmon qualities between imported and the domestic ones. First, we developed a stock and a sausage product with salmon processing by-products to reduce salmon processing waste. Secondly, we developed a new porridge product with the salmon fillets. Lastly, the qualities of three farmed samples (imported I, II and domestic I) were evaluated by measuring freshness, Omega-3 fatty acids, and bacteria counts. The freshness was measured by VBN.
