In this study, We investigated the whitening effect of Siraitia grosvenorii extracts by high pressure steaming treatment. The total polyphenol and flavonoid contents of Siraitia grosvenorii extracts (SGE) and steaming Siraitia grosvenorii extracts (SSGE) were 41.41, 46.97 μg/mL and 4.71, 13.12 μg/mL, respectively. SSGE showed higher than SGE in DPPH, ABTS radical scavenging activity and reducing power.
