Leuconostoc mesenteroidesmaltose as an acceptor were tested for glucooligosaccharidesand mannitol co-production. Leuconostoc oligosaccharideswere produced that were oligomers with a size range of DP 2to 7 and were primarily DP 3, 4, 5, and 6, containing mainlyα-1,4 and α-1,6 linkages.
