The purpose of this study is to develop an aging-friendly food material using mealworms (Tenebrio Molitor), considered as future food resources. To improve the antioxidant activity of mealworms, Alcalase and Flavozyme were added to mealworms in 0.5% and 1%, and then treated at 60°C for 4 hours. In addition, in order to improve the storage properties, the mealworms were treated with 50% alcohol for 24 hours to remove fat, and the quality characteristics of mealworms before and after degreasing were evaluated.
