In this study, chitin and chitosan were prepared from mealworms treated with enzymes and their physicochemical properties were evaluated. The reaction surface method (RSM) is used to determine the optimal conditions for enzymatic hydrolysis. The physicochemical properties of mealworm chitin and chitosan were analyzed, such as solubility, degree of deacetylation (DDA), and Fourier trans infrared spectroscopy (FTIR).
