Effects of controlled atmosphere (CA) and shelf temperature on the shelf life of button mushrooms (Agaricus bisporus cv. 513) were investigated during simulated export shipment and local marketing process. Mushrooms were stored for 4 weeks under two CA regimens, 5 ㎪ O₂+10 ㎪ CO₂ and 5 ㎪ O₂ +15 ㎪ CO₂, then put on the shelf at 20 and 7℃ for 7 days. Effects of CA and shelf temperature were separated by two-way analysis of variance. No significant differences in firmness, texture ratings, browning, and off flavor were observed between the two CA regimens, whereas the quality attributes were significantly influenced by shelf temperature. Local marketing simulation for 5 days at 20℃ resulted in severe quality deterioration even after 3-week storage. In contrast, under 7℃ marketing conditions, quality attributes and overall marketability were maintained at the acceptable level. After 3-week storage plus 5 days on the shelf at 7℃, quality ratings tended to be higher in mushrooms from 5 ㎪ O₂ +10 ㎪ CO₂ CA. Simulation study of mushroom export indicated that 3-week shipment under 5 ㎪ O₂ +10 ㎪ CO₂ CA is the transportation period limit considering additional 5-day marketing at 7℃ as a precondition.
