The overall utilization rate of chilled seafood in school foodservice is high at 83.2%, and squid (15.0%) and mackerel (12.4%) were found to be the most preferred. In foodservice, the use of ready-to-cook (RTC) is increasing to secure the handling safety of seafood. In the RTC market, particularly, HMR is also growing rapidly under COVID-19 situation. The mackerel as a representative fish has high protein and PUFA and is nutritionally excellent, and is suitable as foodservice or senior-friendly food if it can suppress the problems of quality deterioration such as lipid oxidation, protein ... 전체 초록 보기
