Metallothionein (MT) protein, well known as an antioxidant protein, consists of about 20 cysteines of all amino acids. MT binds to heavy metal ions and serves to protect against stress conditions such as heat, starvation or inflammation. Recently, MT has been shown to protect cells from oxidative stress, which is the cause of various diseases such as diabetes, cancer, and aging.
