Amino acid compositions of seven table grape and five wine grape cultivars were analyzed using liquid chromatography-mass spectrometry at various stages of berry maturation and at harvest. Significant differences were recognized for most of the berry composition parameters such as soluble solids, titratable acidity, and juice pH among all cultivars. Amino acid accumulation during different stages of berry development demonstrated significant differences in their concentration, especially, in the contents of arginine, histidine, lysine, methionine, proline, serine, and threonine. Arginine and proline were the major amino acids in all table and wine grape cultivars. The variation in total amino acid accumulation among all the cultivars could be seen just before the onset of veraison and continued till harvest. Significant increase in the accumulation of proline started at the later stages of the berry development, while that of arginine increased gradually from fruit set till harvest. Concentrations of arginine and proline assumed a definite trend during the berry development depending on the cultivars. For table grape cultivars, arginine content was the highest among all amino acids at harvest time. For wine grape cultivars, ‘Sauvignon Blanc’ and ‘Chenin Blanc’ showed the highest arginine content, while ‘Shiraz’, ‘Merlot’ and ‘Cabernet Sauvignon’ showed the highest proline content at harvest.
