In this study, mulberry leaf, which is known as a functional material, was extruded and then added to sunsik was manufactured, and its quality characteristics, antioxidant characteristics and sensory evaluation were investigated. As for the mixing ratio of sunsik, the amount of mulberry leaves added was 30% (w/w), and grain flours (green flesh black bean, barley, black rice, nonglutinous rice, brown rice, brown glutinous rice, glutinous rice) were mixed in the same proportion as 10% each.
